Bison Meatloaf

Bison Meatloaf

Tonight I made bison mini meatloaves (love the mini loaf pans!)

I don't like to measure, but here are the ingredients:

1 package bison meat
1 egg (preferably free-range)
sea salt & fresh ground pepper
pinch of cayenne
generous pinch of chili powder
1/2(?) cup skim milk
1/2 sleeve crackers of your choice (I used Club. Was going to use stale bread but opted for a  smaller starch given the mini-loaf size) 
4 cloves garlic, minced

Optional:
Drizzle hot sauce of your choice on some or all of the loaves for extra kick/ heat. I used Valencia.

Directions
Combine the ingredients in a large mixing bowl with your hands until mixed well.
Spray pan with vegetable spray and fill loaves half-way.
Bake at 325 for 25 minutes.
 (Bison is leaner & therefore, does not need to cook as long as beef).

What I may do differently next time
I could probably add more cayenne (good for metabolism). The garlic did not cook much, so would probably not be to everyone's liking (though uncooked garlic is great for the immune system). Might sautee it in the future or sautee lots of onions. Would also be curious to see how it would turn out if I added hot sauce to half of the mixture (instead of just drizzling on top).

What to pair with
This could be eaten with any starch (rice, pasta, quinoa, cous cous, etc) or cooked vegetable. I plan to eat some of it with lettuce since we have a lot (and there is already starch in the meatloaf with the crackers).
